This dish combines tender pieces of pork fried and cooked with a tangy sweet and spicy masala resulting in a delicious blend of flavors. Mangalorean Pork Indad Recipe
Ingredients:
- 1 Kg Pork
- *For Grinding:*
- 6 Green Chillies
- 10 Kashmiri Chillies or Bydagi
- 2 Cinnamon Sticks
- 8 Cloves
- 1 whole Garlic Bulb
- 1 inch Ginger
- 1 Tbsp Jeera (Cumin Seeds)
- 1/2 Tsp Mustard Seeds
- 3 Medium Onions
- 8 Peppercorns
- 2 Tbsp Sugar
- 1 small lemon-sized Tamarind
- 1/2 Tsp Turmeric Powder
- 3 Tbsp Vinegar
- 1 Tbsp Whisky (optional)
- Salt to taste
- *Add-ons:*
- 3 medium Potatoes
- Oil for frying
*Directions:*
1. *Preparation:*
- Wash and clean the pork, then slice it into thin, large pieces.
- Apply salt and turmeric to the pork slices, and set them aside.
2. *Grinding the Masala:*
- In a grinder, combine green chillies, Kashmiri chillies, cinnamon sticks, cloves, garlic, ginger, jeera, mustard seeds, onions, peppercorns, sugar, tamarind, turmeric powder, vinegar, and whisky (if using).
- Grind the ingredients into a fine paste, ensuring it's well combined and smooth.
3. *Frying the Pork:*
- Heat 2 tbsp of oil in a frying pan or tava.
- Fry the pork slices on both sides until they are golden brown. Fry in batches if necessary to ensure each piece is cooked evenly.
- Once fried, remove the pork from the pan and set aside.
4. *Preparing the Masala:*
- In the same pan with the remaining oil from frying the pork, add the ground masala paste.
- Fry the masala thoroughly for about 10 minutes until it's aromatic and well-cooked.
5. *Cooking the Pork:*
- Add the fried pork slices to the masala in the pan.
- Mix well to coat the pork evenly with the masala.
- Add any water collected after grinding the masala to the pan.
- Cook the pork in the masala over low heat until it reaches a thick consistency.
6. *Frying the Potatoes:*
- Thinly slice the potatoes.
- Fry the potato slices in a separate pan with a little oil until they are crispy and golden brown.
7. *Final touch:*
- Mix the fried potato slices with the cooked pork indad.
- Cover the pan and let it sit for some time to allow the flavors to meld.
- Serve the Mangalorean Pork Indad hot, accompanied by rice, sannas, appams, or dosas.
